Whole Roasted Chicken w/ Lemon + Thyme










Ingredients: 3-4lb organic, free-range chicken, fresh thyme sprigs, lemon, kosher salt, black pepper

And for all you fellow frugal gourmandes, whole chickens are much cheaper - this cost me $5.31 at Trader Joe's and will last me a whole week.  It takes about 50 mins to roast in the oven and the key is to turn it twice during the cooking so that the juices distribute evenly (no one wants dry, stringy chicken).
